奈良は、和食文化の源流をなす地である。
清酒や素麺、お茶、饅頭など、奈良が発祥とされているものは数えきれない。
奈良時代に、遣隋使や遣唐使などを通じて、大陸から文化や食材、食品加工技術などが持ち込まれ、多くの食材がこの地で定着した。また、持ち込まれた新たな技術は、奈良で独自に改良され、日本の食文化の礎となっている。

 

 

Nara Prefecture is an area that is the origen of Japanese cuisine.
Countless foods originated in Nara Prefecture, sake, somen noodles, tea, sweet buns.
During the Nara period(710-794), Japanese envoys who traded in China and Japan learned and brought back ingredients and food processing technology.
Many of the ingredients brought back took root in Nara.
Besides, the new food processing technology that was brought to Nara, some were uniquely improved and became a foundation of Japanese cusine.

吉野本葛

 

別名「白いダイヤモンド」とも呼ばれる吉野本葛は、奈良県の吉野地方で精製した葛のでんぷんである。なめらかな口あたりで和食や和菓子に使われている。

葛は山野に生えるマメ科の植物で、葛の根は薬用や食用になり、漢方薬でよく使われる葛根湯で知られている。

 

 

Yoshino-hon-kuzu

Yoshino-hon-kuzu, also called “White Diamond,” is a starch refined from the roots of Kuzu plant in the Yoshino region of Nara Prefecture.
Its smooth taste is used in Japanese food and sweets.
Kuzu is a leguminous plant that grows in the mountains.
Along with being edible, the roots of Kuzu can be used fer medicinal purposes.
It is also known as Kakkonto, which is used often in Chinese medicine.
